We are going with another original recipe, in this case with white beans to which we are going to add pumpkin and potato.

Ingredients
300 grams of white beans
2 sweet onions
4 fresh tomatoes
4 potatoes
2 carrots
700 grams of peeled pumpkin
2 liters of vegetable broth
2 cloves of garlic
Celery
1 tablespoon of sweet paprika
1 teaspoon ground cumin
Extra virgin olive oil
Salt
Black pepper
Elaboration
Let the dried beans soak for at least 8 hours (although it is advisable to leave them for 10 to 12 hours).
Peel the onions and garlic cloves and chop together with the celery. In a pot, add a little olive oil and fry them.
When they have browned, add the grated tomatoes and add the paprika and cumin, stirring well.
Wash and chop the carrot and cut the pumpkin into cubes (a bit large so that it does not fall apart completely) and add to the pot.
Stir well and add the drained beans.
Cover with the broth and add the chopped potatoes and add a little black pepper.
Bring to a boil, when they arrive, add a little more broth to "scare" them and bring to a boil again. Now lower the heat, cover and simmer for about two hours.
During this process, stir from time to time and add broth if necessary.
If when you finish cooking you want to thicken the stew a little more, you can mash the pumpkin a little.
