PUREE OF LENTILS WITH CANDIED ONION

Today we are going to prepare a delicious dish of pureed lentils with confit onion and vinegar reduction and croutons.

INGREDIENTS TO PREPARE THE LENTIL PUREE WITH CONFITED ONION

250 g of Lentils

2 onions

800 ml Vegetable broth

4 tbsp vinegar reduction

100 g croutons

60 ml of olive oil

1 branch of thyme

Salt and pepper

Preparation of the recipe
Step 1 Prepare the lentils
Arrange the lentils in a large bowl, cover them with cold water and let them soak for the time recommended on the package.

Step 2 Prepare the onion
Peel the onions and cut them into thin strips.

Heat 50 ml of oil in a frying pan, add the onion and fry it over a very low heat, stirring from time to time with a spatula, for 40 minutes; remove it when it is very tender and light brown in color.

Step 3 Cook the lentils
Drain the lentils and put them in a saucepan, pour in the broth and bring to a boil. Cook them over low heat for 45 or 50 minutes.

Step 4 - Making the puree
Mix the onion confit with the lentils and blend them in the blender glass until obtaining a smooth and homogeneous cream. Season and stir.

Step 5 - Plating and decorating the puree
Wash the thyme, dry it with absorbent kitchen paper and separate the leaves. Divide the very hot lentil puree into 4 soup plates or 4 bowls.

Decorate it with a string of vinegar reduction, a few drops of oil, a few thyme leaves and a few croutons. Serve immediately, accompanied by the remaining croutons presented in a separate bowl.
